Salads are delicious, crunchy, green and healthy. And if you make them with quinoa, which is a delicious and nutritious ingredient, they will be even better. A salad is always a good low-calorie option, which you can enjoy at any time. Due to its high nutritional content, a quinoa salad is a highly recommended alternative when eating something healthy and light.

So that you can vary your meals, we present you with three salads with quinoa, so you can enjoy them alone or with your favorite dish. Because they are salads, they are all very easy to make and do not take long, which is ideal if you need to eat fast.

1. Salad with quinoa and vegetables

Ingredients

  • 200 g quinoa
  • 250 g sugar peas
  • 50 g divided almonds
  • 300 ml of water
  • 50 g finely chopped spring onion
  • 25 g of olive oil
  • Purple cabbage (to taste)
  • 2 grated carrots (20 g)
  • 1 red pepper, cut à la julienne (30 g)
  • Salt and pepper (to taste)

Preparation

  1. Dip the quinoa in water at least two or three times.
  2. Pour water into a saucepan, salt to taste, add the quinoa and bring to the boil. When it boils, reduce the heat and keep it under the lid for 10 to 12 minutes.
  3. When the quinoa seeds are ready, they look transparent and have a white “tail”. Strain the water and leave for 10 minutes.
  4. Steam the sugar peas and strain the water.
  5. Stir in the quinoa with a fork.
  6. After all the ingredients have cooled, mix the remaining ingredients in a bowl with salt and pepper, vinegar and olive oil.

2. Salad with quinoa and broccoli

This salad includes not only broccoli but also other very nutritious ingredients. You can take this salad to work as a complete lunch!

Salads with quinoa

Ingredients

  • Salt (to taste)
  • 1 cucumber (40 g)
  • 1 lemon (30 g)
  • 1 tomato (30 g)
  • 3 cloves garlic (3 g)
  • 1/4 garlic (5 g)
  • 4 DL water
  • 200 g quinoa
  • 100 g of broccoli
  • 1 yellow pepper (30 g)
  • 1/4 teaspoon ground black pepper (2.5 g)

Preparation

  1. First, rinse the quinoa by putting it in a colander under the tap. Then let the water drain out.
  2. Then empty the quinoa and water into a saucepan with 1/4 onion, a clove of garlic and a teaspoon of salt.
  3. Bring the mixture to a boil. When the water starts to boil, lower the heat and simmer for approx. 15 minutes or until the water has boiled away.
  4. Then cut the broccoli into small pieces and immerse them in boiling water for 1 minute. Strain the water and save them for later.
  5. Peel and cut the cucumber into small cubes. Do the same with the peppers and tomatoes.
  6. To prepare the vinaigrette, mix the olive oil with the juice of a lemon, two chopped garlic cloves, half a teaspoon of salt and a quarter teaspoon of pepper in a bowl. Stir until well blended.
  7. Once the quinoa has cooled, mix it in a bowl with the broccoli, peppers, cucumber and tomato.
  8. Pour a little vinaigrette over, and cool it down.

 

3. Quinoa and corn salad

This salad is the simplest of all, so we encourage you to make it. In just 10 minutes you can enjoy this nutritious salad with quinoa!

Salads with quinoa

Ingredients

  • 100 g quinoa
  • 1/4 cup corn (50 g)
  • 12 black olives (5 g)
  • 12 cherry tomatoes (20 g)
  • 1/4 cup grated carrot (50 g)
  • 1 avocado cut into cubes (80 g)
  • Extra virgin olive oil (to taste)

Preparation

  1. First, as with all salads, rinse the quinoa well, either in a strainer or dip it in a bowl at least three times. The reason it needs to be washed is that we want to remove the saponin coating.
  2. Then rinse the olives and cherry tomatoes well.
  3. Then start making the quinoa by following the instructions suggested above, or follow the packaging instructions.
  4. Once the quinoa has cooled, put it in a bowl and mix it with the rest of the ingredients.
  5. Then add the olive oil to add some moisture (that is, to make the salad less dry) and give the ingredients more flavor.
