Ingredients (for 3 or 4 people)

  • ¼ a cup of fried onions (50 g)
  • ¼ a cup of white wine (50 ml)
  • 5 pork fillets (750 g)
  • ½ a cup of whipped cream (125 ml)
  • 1 teaspoon chili (5 g)
  • Spices: sea salt, Provence herbs
  • Olive oil (required amount)
  • 2 ½ cups blue cheese (approx. 500 g)
  • Optional: fresh parsley, butter.

Preparation

  1. To begin, start by preheating the oven to 220 ° C.
  2. Clean the pork fillets and place them on a baking tray. Once lying there, season with plenty of sea salt and olive oil.
  3. Set aside for 10 to 15 minutes. After this time, sprinkle some chili on them.
  4. Cook fillets for 20 minutes at a temperature of 220 ° C.
  5. After the first 15 minutes, take the baking tray out of the oven and pour white wine over the fillets. Put the baking tray back in the oven.
  6. Cut the blue cheese into thin slices.
  7. Pour cream into a saucepan over medium heat. Before it boils, add slices of blue cheese. Stir constantly so that both ingredients mix well and begin to form a cream.
  8. When the cream has thickened enough, add Provence herbs and continue to stir over low heat for approx. 2 or 3 minutes. If the sauce is not thick enough, add a little butter or cream.
  9. When the pork fillets are ready, turn off the oven, take out the baking tray and pour the blue mold sauce over the fillets.
  10. When serving, you can decorate with a pinch of Provence herbs and a little parsley.

  • 1 cinnamon stick
  • 8 red apples
  • 1 cup water (250 ml)
  • ½ cup sugar or honey (100 g)

Preparation

  1. Wash and rinse the apples. Discard the apple cores and cut the apples into julienne strips.
